Paneer is a form of cheese made from cow or buffalo milk that is fresh, unaged, and almost salt-free. If you've ever eaten Indian cuisine, you're probably very familiar with it. In South Asian countries such as India, Pakistan, Bangladesh, Nepal, Afghanistan, and Sri Lanka, it is extremely common. It has a very slight and mild flavor on its own, but when used in curries or sauces, it absorbs all of the flavors and spices from the dish and transforms into whatever you want. Paneer is delicious on its own, but it can also be used to replace any meat in a dish.
